Eat (Food)
Let's face it, even though being vegan and eco-friendly encompasses your entire life, you're most interested in the food. But finding and making delicious healthy, compassionate and ethical meals can be challenging, especially if you're brand new to this way of living. Eco-Vegan Gal is here to help you navigate the water, sharing her favorite finds and best resources in the following sections.
Healthy, Guilt-Free French Toast
Easy, Eco Organic Peppermint Holiday Hot Chocolate
Happy National Hot Cocoa Day! Yep, that's actually a day (look it up if you don't believe me). To celebrate I finally recorded my new vegan hot chocolate recipe, which I've been perfecting over the last few weeks. I've experimented with different nut milks and flavors and this one is the richest and tastiest yet! Plus, it's free of gluten, soy and sugar and you can use all bulk ingredients. Enjoy!
Cooking with Eric Lechasseur
As a result of being one of Seed Kitchen's best customers I've come to know the chef and owners very well: Eric Lechassuer and Sanae Suzuki. Recently they asked me to help them with cooking videos, and they came out very well.
Here are the first 2 videos in the series. Join Eric as he demonstrates how to make 2 organic, macrobiotic recipes from his books "Love Eric" and "Love Eric and Sanae". Both these dishes are delicious and easy - they each take less than 10 minutes to prepare. I highly recommend that you try them, especially if you've never been to Seed (you're missing out!).

Banana Mint Chip (Almost) Ice Cream
I should probably call this recipe Banana Mint Chip Chilly Cream, since it's not very icy. It doesnt really matter though - the consistency isn't what makes this dessert worth whipping up (literally), it's all about the flavors. Easy, quick, inexpensive, and guilt-free.
Raw Vanilla Pudding
Creamy, rich, and sweet, this raw recipe is easy to make and free of refined sugar. If you get everything in bulk then it's very eco-friendly as well!
Hella Good Gluten-Free Mac & Cheese with Daiya
A blog called West Coast Vegan has a fantastic recipe, which I modified a little to take out the soy. This mac & cheese is so creamy and flavorful! I wish my pictures did it justice, but I was too excited about eating it that I couldn't focus on the photography!
